Amuse with Welcome Cocktail

“Baked Brie Bites” – Spiced apple honey, Brie cheese

Description: Puff pastry shaped in a bite size cup. Small piece of brie cheese in the center baked off and drizzled with spiced apple honey and finished with flake salt. This will softly open the taste buds with a sweet/spicy component and a need cheesy fat to act as the binder to soften those first flavors. A nice crispy flaky puff pastry cup and flake salt to hit the tongue first cause the mouth to salivate and opening the taste buds.

 

First course

Beer pairing: “Slow Breeze” - Belgian style 4%

Food pairing: “Savory Oats” - mushrooms, spinach, peanuts, sesame

 Description: Traditional oats picked up with lightly browned mince garlic and ginger. Hard seared mushrooms and sauteed  in the same pot then deglazed with a light beef broth. The oats are then cooked till a light softness but still able to contribute texture. The oats will be plated over a savory peanut butter, no sugar, earthy tones. Finally drizzled with some sesame oil and sesame seeds.

 

Second Course

Beer pairing: “Pineapple Express Yourself” – Fruit Wheat 6%

Food Pairing: “Coconut Rice” – Shrimp, Lemongrass, Ginger

 Description: Shrimp marinated in turmeric, ginger, and lime. Then soft poached. Coconut rice blended with steamed coconut flakes to make a thick “pudding”. Finished with lime zest, pineapple oil, and crispy dehydrated coconut flakes.

 

Third course

Beer pairing: “Witty Monkey” – Wheat Beer 9.5%

Food pairing: “Braised Chicken” – Fennel, Jicama, mint, Carrot

 Description: Chicken braised with ginger, pineapple, lemons, and nuts until tender and then shredded. Fresh Jicama and fennel slaw with basil, mint, and cilantro. Finished with a ginger-carrot vinaigrette and toasted nuts.

 

Fourth course

Beer pairing: “SapSquatch” – Barley wine 13.7%

Food pairing: “Brisket” – Sweet potato, Bacon, Carrots

 Description: House brisket, on a bed of sweet potato puree. Into the puree will be blended brown butter, and brie cheese. Accompanied by crispy lardons and carrot frites. Finished with a maple bacon vinaigrette.

 

Fifth course

Beer pairing: “The Pursuit” – IPA 6.4%

Food pairing: “Pretzel Pears”

 Description: Sweet coffee poached pears, crusted in hard pretzel crumbs. Served over a bourbon caramel and finished with flake salt.
